After I patented the kit for making the hanging caciocavallo at home, for sale on our e-commerce, and after I started with evenings in restaurants to show this project live, the curiosity to start putting my own stand in events began to grow inside me.
Said and done. I started in the traditional festivals near home, and within a few months, seeing the success, I decided that the project had to go outside our neighborhood.
I wanted to make it in a novel way, that is, by hanging the caciocavallo on wheels. In fact, we are the 1stfood trailer of hanging caciocavallo.
Within a few months we found ourselves touring Italy on major street food circuits.
My vision is to raise awareness of hanging caciocavallo in all its nuances, beyond the traditional.
We worked hard on the choice of caciocavallo, choosing the one with the perfect balance between saltiness and seasoning, and being perfect when hung.
History

Fed up with my factory job, and looking for something that could give me the right motivation to change my working life, I found myself on an August Ferragosto in 2021 at an outing with friends. As tradition commands in Basilicata, after the classic barbecue, the custom is to hang caciocavallo cheese. As the embers gave their first effects on the caciocavallo, I wondered to myself, "How come we have to wait for an event to be able to eat the hanged caciocavallo?" "We actually only hang it on anniversaries. How come? Yes, because it's complicated to make anyway, trop- po slam," I continued to myself. But at some point, FOLGORAZIONE! "I have to find a solution right away so that I can do it when I feel like it.."

FROM ELECTROCUTION TO E-COMMERCE

I spent the next few months testing various solutions and got to the point where I devised a system within everyone's reach. Basically, I devised and patented a stand (Teepee) so that I could hang caciocavallo at home in a faci- le, fast and cool way (that never tastes). Perfect for tables with friends. In January 2022, the long-awaited entrepreneurial project has arrived and is named Cacio's.

SEPTEMBER 2022: After spending the summer hanging caciocavalli in restaurants to promote the Teepee, as a joke together with Filippo Vulpio, who takes care of the image of Cacio's, we decide to put a stand in the

festivals and in some street food near home, aiming to be the coolest in terms of image (humble), as the competition lends itself to looking like open-air blacksmiths.

People are beginning to like us, and to enjoy us with our hanging caciocavallo cheese. The first satisfactions arrive! The two of us are joined by another serial hangers, Cuenca Vicente Fernandez.

June 2023: We cannot be the same as others! I often repeat to myself. I wanted a strong image impact that could dress up this fantastic tradition for good, also especially to highlight our caciocavallo, which now gets us thousands of compliments. This is why the 1st hanging caciocavallo food trailer was born.

By now people appreciate us more and more, and getting compliments from people who try our product is the best part of it all! We started as a joke with events near home, and we find ourselves touring all over Italy. We got to hang 160kg of caciocavallo in three days. The goal of making hanging caciocavallo, in premium mode, is working, and we will continue to proudly carry around this fantastic tradition that is the fruit of our land, always representing it at the TOP.
